This coconut keto French toast is a fun, easy and delicious breakfast recipe perfect for the weekend and for satisfying your French toast cravings. This keto toast is 100% gluten-free, nut-free, grain-free and paleo.

If you love coconut flavors, berries and crunchy cacao nibs, you will be amazed by this keto French toast recipe. However if you don’t have a sweet tooth, you can swap the berries and whipped coconut yogurt for a few savory toppings instead. Think fresh avocado slices, a poached egg or two and some fresh herbs. Whichever way you like your keto French toast, I hope you enjoy it!

Coconut Keto French Toast

Start to Finish: 20 minutes

Ingredients:

  • 1 loaf Paleo Coconut Flour Bread (I added extra turmeric to this batch to create a yellow hue)
  • 1 tablespoon grass-fed butter or ghee
  • 1/3 cup coconut yogurt
  • Granulated sugar-free sweetener to taste (I used 2 teaspoons of stevia)
  • 1 teaspoon vanilla extract
  • Optional garnishes: Cacao nibs, fresh organic berries, shredded coconut, cinnamon, edible flowers

Instructions:

  1. Get your Paleo Coconut Flour Bread and slice it into 3 pieces. Then slice each piece in half again lengthwise to create 6 total pieces of bread.
  2. In a frying pan, heat butter or ghee on medium heat and swirl to coat the pan.
  3. When the pan has heated, add 2 pieces of bread and cook on each side until golden brown and toasted.
  4. While bread toasts, create yogurt topping: Add coconut yogurt, sweetener and vanilla to a bowl. Use a hand beater or whisk to whip the coconut yogurt for a few minutes until it starts to thicken. Taste the yogurt and add more vanilla or sweetener if desired.
  5. Assemble keto French toast: Divide finished bread between two plates and top with yogurt mixture and garnishes.
  6. Keep the remaining pieces of bread in an airtight container and consume within 2 days, or freeze for the next time you make keto French toast.
