Lemon Coconut Energy Bites

Some flavors are just meant to go together. Chocolate and strawberries, avocado and lime, bacon and more bacon – the list goes on. Add one more to that list: lemon and coconut. It all started as a happy accident, after throwing a Lemon Cookie Collagen Bar into a gym bag and forgetting about it until the next day. When discovered, the bar had sadly broken into a few pieces. Normally, one might just eat it anyway, but this bar was destined for something special. Spoiler alert: it was the food processor.

When you think of a classic energy bite or ball, the typical ingredients include peanut butter, oatmeal, dates and a host of other Red Zone choices. This recipe eliminates all non-Bulletproof ingredients, kicks up the fat a notch with a spoonful of Brain Octane Oil, and provides a healthy, packable, fun alternative to an already amazing snack.

Lemon Coconut Energy Bites

Ingredients:

Instructions:

  1. Using a food processor or a fork, finely crush the bars.
  2. Add in the honey and Brain Octane, blend into a mixture.
  3. Fold in the shredded coconut and distribute evenly with a spoon or spatula.
  4. Using a spoon to scoop, mold each bite into the shape and size of a ping pong ball. Sprinkle a little coconut and lemon zest (if desired) on the top to finish.
  5. Refrigerate for one hour before serving.
  6. Makes 4 lemon coconut energy bites, lasts up to 3 days if continuously refrigerated in a sealed container.
