Savory Paleo Breakfast Bowl With Sweet Potato

Breakfast bowls aren’t just for breakfast. You can make this Paleo breakfast recipe for lunch or dinner, too, especially on the days when you’re fasting with Bulletproof Coffee. There’s a substantial amount of fat and protein to keep you full for hours and a good amount of phytonutrients, thanks to those cruciferous veggies. 

Savory Paleo Breakfast Bowl With Sweet Potato  

Ingredients:

  • 1/2 bag organic broccoli slaw
  • 4 slices of organic, pasture-raised bacon
  • 4 organic, pasture-raised eggs
  • 1 purple sweet potato
  • 1 tablespoon avocado oil or Grass-Fed Ghee
  • Pink Himalayan sea salt

Instructions:

  1. Place cleaned sweet potato in the steamer basket, set over the boiling water, cover, and steam over the stove for about 20 minutes. Steaming helps retain the potato’s bright color. (Note: You can do this ahead of time or the night before so you have it ready in the fridge.)
  2. In a large skillet, place bacon in a single layer and cook on medium-low heat until cooked through but not crispy. Remove bacon from pan and plate.
  3. In the same pan, add half of the bag of broccoli slaw on one side with a tablespoon of avocado oil or ghee and a few grinds of pink salt. After a few minutes of sautéing, add 2 eggs on the other side to lightly fry.
  4. When your first two eggs are done, gently remove and add the last two eggs to fry.
  5. Remove everything from the pan, serve up in two bowls, and enjoy!
