Keto Pots De Creme

These keto pots de creme mimic a traditional version of the same recipe: Just like a regular pot de creme, it has a thick, custard-like mousse flavored with rich chocolate. Traditional pots de creme typically include heavy cream and often require light cooking or baking — but this keto version takes a totally dairy-free and no-cook spin on it.
With one simple swap, keto pots de creme capture the same iconic silky texture and rich flavor without the cream. While heavy cream is keto-friendly, it still contains lactose that can upset your stomach.

What’s the swap? Avocados. Avocados make these keto pots de creme as creamy and delicious as the original version while keeping the chocolate flavor intact. Plus, this substitution allows your keto pots de creme to come together quickly without cooking. You don’t need to monitor your cream’s temperature or wait for your pots de creme to cool with this recipe.

Keto Pots De Creme
Start to Finish: 15 minutes
- 3 large avocados, skin and pits removed
- 5 tablespoons cocoa powder
- 1 teaspoon liquid stevia
- 1/4 cup hazelnuts
- 2.5 ounces 100% dark chocolate, melted
- Small pinch of salt
- 2 teaspoons vanilla extract
- Optional garnishes: Raw nuts, whipped coconut cream
- In a food processor, add all ingredients except garnishes. Process pot de creme base until smooth and no chunks of avocado remain.
- Spoon chocolate paste into small bowls or ramekins. Garnish and enjoy right away for a smoother, more pudding-like texture, or refrigerate for at least 2 hours for a thicker mousse-like texture.

Note on ingredients: Except for coconut, all nuts are considered “suspect” on the Bulletproof Diet because of their high levels of omega-6 fats that can oxidize and contribute to inflammation. Nuts are also susceptible to mold and contain lectins, nutrient-sapping compounds that can be tough on your gut. Use nuts in moderation, or remove them from your diet and reintroduce in small amounts to test your sensitivity.
