Vietnamese egg coffee (AKA Cà Phê Kem Trứng) is a rich and sweet, creamy coffee drink originating from Hanoi, Vietnam. It tastes like melted coffee-flavored ice-cream. Extra-strong brewed coffee balances a lush mix of sweetened condensed milk, whipped egg yolk and half & half.
The following recipes were inspired by the owners of Café Thắng who demonstrated their technique for making both the hot and iced versions of Cà Phê Kem Trứng.
What is Egg Cream?
The common component to Vietnamese Egg Coffee is a whipped egg yolk cream that is spooned over the top.
Egg Cream Safety Tips
Use the freshest eggs possible. The egg yolk will be gently heated by the coffee in the hot version of this drink. For the iced version, temper the raw eggs by boiling them for one to two minutes before breaking and separating the whites from the yolk if there is any concern about food born illness.
How to Make Egg Cream for Vietnamese Egg Coffee
Special equipment: Handheld milk frother equipped with a double whisk 2-ounce measuring cup
Crack a large egg into your hand, letting the whites fall between your fingers and leaving the yolk intact. Gently transfer the yolk to a 4 ounce measuring cup.
Using a handheld milk frother equipped with a double whisk, beat the egg yolk on high speed while tilting the cup slightly with your other hand. Beat until the mixture has doubled in size, about 2 minutes.
The Bulletproof Method
Bulletproof Vietnamese Egg Coffee utilizes coconut cream. Unsurprisingly this process had a distinct yet pleasant coconut flavor. Coconut cream is just coconut and water with no other additives, don’t confuse coconut cream with coconut creamer which contains other ingredients.
Our method also utilizes Bulletproof creamers and alternative sweeteners like monkfruit.
Bulletproof Vietnamese Egg Coffee

Ingredients
- 2 scoops Bulletproof Original Creamer
- 2 tbs coconut cream at room temperature
- 6 oz The Mentalist brewed coffee
- 1 tsp monkfruit
- 1 large egg yolk creamed
Instructions
- Brew fresh coffee.

Ingredients:
- 2 scoops (2 tablespoons, 1-ounce) Bulletproof Original Creamer
- 6 tablespoons (3-ounces) coconut cream at room temperature, divided 8 ounces strong cold-brew coffee, such as The High Achiever
- 1-2 teaspoons granulated monkfruit
- 1 large egg yolk, creamed
Directions: In a 16 ounce (or larger) glass combine the Bulletproof Original Creamer, 2 ounces (1/4 cup) of coconut cream, cold brew and granulated monkfruit. Using a handheld milk frother, blend on high until well combined and smooth. Add ice to the glass of coffee to fill, then spoon the egg yolk mixture on top and enjoy.
The Sweetened Condensed Milk and The Evaporated Milk Method
Sweetened condensed milk clocks in at 10.5 grams of sugar per tablespoon. Evaporated Milk is the unsweetened version of sweetened condensed milk. Both are made with milk that is heated until at least 60% of their water content has evaporated and the milk has thickened. They are each available in both BPA-free cans and paperboard cartons similar to other dairy products. Organic evaporated milk usually contains about .5% of the stabilizer Disodium Phosphate per serving, so if you are sensitive to this emulsifier, choose another method.
The evaporated milk recipe used here is sweetened with granulated monkfruit and it is similar to the sweetened condensed milk version in both taste and consistency.

- 4-6 ounces strongly brewed cold brew coffee
- 1 large egg yolk, creamed
Directions: Start by brewing 4-6 ounces of strong coffee. In a mug, combine the coffee, 2 ounces of half & half, and 2 tablespoons of sweetened condensed milk or evaporated milk. Stir in 1 teaspoon of granulated monkfruit until fully dissolved. In a separate cup, use a handheld milk frother to whip 1 large egg yolk until it becomes light, fluffy, and doubles in size. Gently spoon the whipped egg cream over the coffee, allowing it to float on top.
