Mint Chocolate Chip Protein Balls

These low carb protein balls are filled with cacao, coconut and collagen, making them a great source of fat and antioxidants. If you’re short on time, protein balls make the perfect pick-me-up when you need a snack that satisfies.

Protein balls are also easy to prepare. These ones use Mint Chocolate Chip Collagen Protein Bars mixed together with coconut cream, cacao, a touch of raw honey and a hint of Brain Octane Oil to keep you full and focused. For even mintier flavor, add a drop of food-grade peppermint oil.

I used a touch of raw honey in this recipe, since it makes the texture of the ball more creamy and smooth. The mint compliments cacao really well, while salt enhances their rich flavors. I coated the protein balls with unsweetened desiccated coconut and cacao nibs for extra crunch on the outside.

This recipe requires no baking, just a few minutes of crumbling, blending and molding. Refrigerate these protein balls and enjoy them whenever you want a surge of clean energy.

Mint Chocolate Chip Protein Balls

Start to Finish: 30 minutes (10 minutes active)


  • 1 Mint Chocolate Chip Collagen Protein Bar
  • 1 small can coconut cream (about 5 1/2 ounces)
  • 2 scoops Collagen Protein
  • 1 tablespoon Brain Octane Oil or melted coconut oil
  • 2 tablespoons cacao powder
  • 1/2 tablespoon raw honey
  • 1/4 teaspoon stevia powder, or 6 drops liquid stevia
  • 1/4 teaspoon salt
  • 3 tablespoons unsweetened desiccated coconut
  • 3 tablespoons cacao nibs


  1. In a bowl, break up the collagen bar into small crumbs. Mix in all remaining ingredients except cacao nibs and desiccated coconut.
  2. Mix the dough well with a spatula until well combined. Then, place into the fridge for around 10 minutes to firm the mixture.
  3. After refrigeration, prepare the protein balls: Line a dish or bowl with greaseproof paper to keep them from sticking. Mix desiccated coconut and cacao nibs in a bowl.
  4. Wet your hands to make it easier to handle the mixture. Form 6 protein balls around 1 inch in diameter. Roll each ball in the coconut and cacao nib mixture to coat.
  5. Refrigerate protein balls for another 10 minutes until set and enjoy.
