Collagen Breakfast Cookies

Start to Finish: 25 minutes

Ingredients:

  • 2 eggs
  • 1/2 cup almond flour
  • 1/2 cup shredded coconut
  • 1/2 cup sliced almonds
  • 1/2 cup pecans
  • 1/3 cup roasted almond butter
  • 1/3 cup birchwood xylitol
  • 1/2 cup pumpkin seeds
  • 2 Tbsp. ground flax meal
  • 2.5 Tbsp. Bulletproof Vanilla Collagen Protein
  • 2-3 tsp. cinnamon
  • 2-3 tsp. ginger powder
  • 1 tsp. vanilla extract

Optional: 1/2 cup of quality chocolate, chopped (or sugar-free chocolate chips)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Line two baking trays with parchment paper.
  3. Mix all cookie ingredients together in a bowl.
  4. Oil hands with some coconut oil and roll the mixture into balls. Place them on the lined baking trays and press them into flat, even cookies.
  5. Place the tray in the oven and bake for approximately 20 minutes, or until golden and cooked through.
  6. Remove cookies from oven and allow time to cool.
  7. Serve with a hot cup of Bulletproof Coffee.
