Collagen Breakfast Cookies

Start to Finish: 25 minutes
Ingredients:
- 2 eggs
- 1/2 cup almond flour
- 1/2 cup shredded coconut
- 1/2 cup sliced almonds
- 1/2 cup pecans
- 1/3 cup roasted almond butter
- 1/3 cup birchwood xylitol
- 1/2 cup pumpkin seeds
- 2 Tbsp. ground flax meal
- 2.5 Tbsp. Bulletproof Vanilla Collagen Protein
- 2-3 tsp. cinnamon
- 2-3 tsp. ginger powder
- 1 tsp. vanilla extract
Optional: 1/2 cup of quality chocolate, chopped (or sugar-free chocolate chips)
Instructions:
- Preheat oven to 350°F (175°C).
- Line two baking trays with parchment paper.
- Mix all cookie ingredients together in a bowl.
- Oil hands with some coconut oil and roll the mixture into balls. Place them on the lined baking trays and press them into flat, even cookies.
- Place the tray in the oven and bake for approximately 20 minutes, or until golden and cooked through.
- Remove cookies from oven and allow time to cool.
- Serve with a hot cup of Bulletproof Coffee.
