These flourless, low-carb coconut macaroons are soft, chewy and flavorful. And as a bonus — they’re fortified with collagen protein. They take just minutes to prepare and are fully cooked in 15 minutes. This keto macaroons recipe makes nine large cookies, but feel free to make them smaller if you like. If you go that route, just be sure to watch the cook time, as it will likely be closer to 10 minutes rather than 15.

Once your cookies are lightly browned and crisp on the edges, it’s time to dig in!

Keto Coconut Macaroons

Ingredients

  • 1 1/2 cup shredded coconut unsweetened
  • 5 tbsp birch xylitol
  • 1 scoop Bulletproof Vanilla Collagen Protein
  • 1/2 tsp baking powder (aluminum-free)
  • 1/2 tsp pure almond extract
  • 2 egg whites patured
  • unsweetened dark chocolate baking chips Optional

Instructions

  • Preheat oven to 325ºF.
  • Place all of the dry ingredients in a mixing bowl and stir well to evenly mix.
  • Add almond extract and egg whites and stir well to combine.
  • Use a large spoon to scoop nine equal servings and place them evenly spread apart on a parchment-lined (or silicone baking mat lined) baking sheet. If unlined, you will need to brush your baking sheet with oil to keep the macaroons from sticking.
  • Optional: Top each macaroon with a few unsweetened dark chocolate chips before placing in the oven.
  • Bake for approximately 15 minutes or until macaroons are lightly browned.
  • Using a spatula, remove from baking sheet and allow to cool before eating.
